What is Fish Maw?
Fish maw, derived from the dried swim bladder of fish, is one of the eight treasured seafood delicacies. It is the "du" (肚) in "Abalone, Sea Cucumber, Shark Fin, and Fish Maw" (鲍参翅肚). Rich in collagen, various vitamins, and essential trace elements such as calcium, zinc, iron, and selenium, fish maw is known as the "Ginseng of the Sea."
Since the Han Dynasty, fish maw has been regarded as a precious nutritional supplement in Chinese cuisine. According to the Compendium of Materia Medica (本草纲目):
"Fish maw has a mild and slightly sweet taste, providing nourishment without causing excessive heat. It strengthens the kidneys, replenishes energy, nourishes tendons and veins, and supports both qi and blood replenishment."
